What is up with all this 'low carb' stuff? I really don't get it. All I understand is calories, fat, etc. etc.

LOL, well, since the low-carb craze has spread everywhere, it's really all about Net carbs, the carbs that impact your blood sugar. Carbs like fiber and Sugar alcohols are not counted, as they don't affect your blood sugar.

However, the FDA nutrition label requirements only require, plain sugar and fiber to be broken out on the carb list, so you sometimes end up counting suagar alcohols as misc carbs.

Basically, carbs are easily converted into sugar which your body burns readily, giving you sugar highs, etc. When you eat high carb food and fatty foods, ie Steak and potatoes, your body burns the carbs first, and stores the fat. If you eat too many carbs, your body will convert some of them into fat for storage as well.

But, if you eat only low carb foods, you are not giving your body sugars to burn quickly, so your body converts to burning fat, Ketosis(SP) this allows you to burn the fat in the food you eat as well as stored fat readily.

But, you can't just quit low-carbing either, when you cheat or quit abruptly, your body switches right back to burning sugars and you regain all the weight quickly.

It's a process to learn how to eat lower carb foods as part of your lifestyle.

Remind me never to become a doctor/nutritionist or something. I think I'll stick to the dead bodies and become a C.S.I./Forensics.

At least dead people don't have to worry about those confusing carbs lol.
